It was necessary for the ancient peoples to grow their own food, since
there were no methods of preserving or transporting it. Foods must be
preserved from the invasion of bacteria if they are not to be injurious
when eaten. In early times it was learned that meat kept longer when
temporarily preserved by roasting and smoking, and this was done without
any knowledge of bacteria. The Crusaders introduced sugar into Europe
from Cyprus, and as a result of this, it was discovered that a heavy
syrup made from sugar would preserve fruits and also vegetables and
meats. Then it was discovered that foods could be preserved by the use
of spices, vinegar and alcohol.
고대인들은 음식을 보관하거나, 수송하는 방법이 없었기 때문에 자신들의
음식을 재배하는 것이 필요했다. 음식을 먹을 때 해롭지 않게 하기 위해
박테리아의 침입으로부터 음식물을 보호해야 했다. 고대에 사람들은 고기를
굽고 훈제해 보관하면 당분간은 고기가 더 오랫동안 보존된다는 것을
알았는데, 박테리아에 대해 알지도 못한 채 이렇게 한 것이었다. 십자군들은
키프로스에서 유럽으로 설탕을 들여왔다. 그리하여 설탕으로 만든 진한
시럽이 과일은 물론이고 야채와 고기까지 보존할 수 있다는 것을 발견했다.
그때에 사람들은 음식물을 향신료와 식초 알코올을 이용해 보존할 수 있는
것을 알고 있었다.
